Last Post of the Summer!

Honey Balsamic Glazed Salmon
Now, before you get upset with me about not including the nutrition breakdown, let me explain! This last dish is a dish that my mother found in a cooking magazine (that's right, I'm going against my own rules and NOT cooking something out of my cookbook). My mother tried it one time, and we LOVE it! Since then we have both shared this recipe with many friends and have found that it is an instant hit. I am going by memory here people, so bare with me, and let's cook some salmon!!
Ingredients
-salmon (one fillet, two...or)
-1/3 cup oj
-1/3 cup balsamic vinegar
-couple tablespoons of honey
-salt/pepper
-olive oil
First you need to season the salmon with some salt and pepper (this is not mandatory you sodium conscious people). Put your skillet on medium heat (adjust as needed) and then put the salmon fillet in skin side up. Cook for about 5 minutes on this side.
Next, flip the salmon to the other side (skin side up) and cook for an additional 5-6 minutes. Now, when the time I have listed is up, please check your salmon and make sure it is completely cooked! This fish is a tricky one to cook. You may need to flip it again and cook it some more.
When the salmon is completely cooked through, put it on a plate and top it with foil to keep warm. Wipe off your skillet with a paper towel, and return to the heat. Mix up your balsamic vinegar, honey, and OJ with a wire whisk in a bowl. Pour the liquid into the skillet, and let it simmer for about 4 minutes. Use that wire whisk to stir a few times.
When the consistency of the liquid is like syrup almost, pour it into two small dishes or bowls (like baby bowls now, not cereal bowls). Uncover your salmon, pour the liquid over the top of it and VOILA! You have a delish dish! I usually serve it with some rice and salad.
